Corn fritters

Ingredients
- - 3 cups corn kernels (fresh, frozen or canned)
- - 1 capsicum, diced
- - 4 eggs
- - 1/2 cup flour
- - 1 teaspoon baking powder
- - 3 tablespoons oil
Method
- 1. Mix together the corn kernels, capsicum, eggs, flour and baking powder.
- 2. Heat the oil in a large frying pan.
- 3. Spoon mixture into the pan to form fritters (about two tablespoons per fritter).
- 4. Cook the fritters in batches until browned on each side.
