Kawakawa Spritzer

Did you know you can make a tasty drink with dried kawakawa leaves? They have a delicious spearmint taste so try it when you have whānau and friends over.
Ingredients
  • 1 bottle sparkling water (1.25L bottle)
  • 1 cup boiling water
  • 1 tablespoon honey
  • 1/2 teaspoon dried kawakawa (see note below)
  • 1 lemon, sliced (optional)
  • 2 cups ice
Method
  1. 1. Mix dried kawakawa, boiling water and manuka honey together in a cup. Infuse and allow to cool down.
  2. 2. Pour kawakawa mixture into glass jug, fill with ice and top up with sparkling water.
  3. 3. Serve with slices of lemon (if using).
Notes
To dry kawakawa leaves quickly: Wash and pat dry kawakawa leaves. Place inside a folded paper towel and microwave on HIGH for 30 to 40 seconds. Unwrap and let cool. Leaves can be stored in an airtight container for use later.
