Mini banana and coconut pancakes
A quick and tasty snack. This recipe makes six mini pancakes.
Ingredients
- 1 ripe banana, mashed
- 2 eggs
- 1/2 cup desiccated coconut
- cooking oil or margarine
Method
- 1. Beat together mashed banana, eggs and coconut.
- 2. Heat a non-stick frying pan to a medium heat and spray with a little cooking oil.
- 3. Spoon one tablespoon of pancake mixture into the pan.
- 4. Cook pancakes on each side until golden brown.
