Rewana bread starter bug

You need just four simple ingredients to make this starter bug for delicious rewana bread. This recipe is available in English and Te Reo Māori.

Ingredients
  • 1 cup of plain flour (1 kapu paura tōkau)
  • 2 Tbsp sugar (2P huka)
  • 1 cooked small potato (1 rīwai iti kua tunua)
  • 1 tsp baking powder (1p pēkena paura)
Method
  1. 1. Boil potato in 1 ½ cups of water (Kōhuatia te rīwai ki te 1 ½ kapu wai).
  2. 2. Mash into the water when soft and let cool (Ka ngāwari ana, penupenuhia ki te wai, ā, tukua kia mātao haere).
  3. 3. Mix all ingredients together and place in a warm place like a hot water cupboard (Whakaranua ngā mea katoa, ā, waihotia ki tētahi wāhi mahana, pēnei i te kāpata wai wera).
  4. 4. Feed the bug daily with a half a cup of flour, 1 tsp sugar and enough lukewarm water to make a thick shake type consistency (Whāngaihia te whakaohooho i ia rā ki te haurua kapu paura, ki te 1p huka me te wai mahana, kia āhua rite te mātatoru ki te inu aihikirīmi).
  5. 5. When it bubbles it is ready to use (Kia koropupū mai, kua rite hei whakamahinga).
  6. 6. When not using place in the fridge. Repeat from point 4 when you want to use again (Hei ngā wā kāore i te whakamahia, waihotia ki te pouaka mātao. Whāia anō ngā tohutohu mai i te nama whā,heke iho ki te pīrangi whakamahi anō).
