Sushi with tuna and cucumber

Sushi is the Japanese preparation and serving of cooked vinegared rice combined with a range of ingredients, usually seafood, chicken and/or vegetables.
Ingredients
  • - 125 grams short grain rice
  • - 150 ml water
  • - 1 tablespoon vinegar
  • - 1 teaspoon sugar
  • - 1 roll of sushi-seaweed (nori)
  • - 50 grams of tuna (in spring water), drained
  • - 1 teaspoon mayonnaise
  • - 1/4 small cucumber, sliced into sticks
  • - 1 bamboo rolling mat
Method
  1. 1. Rinse the rice under cold running water and drain
  2. 2. Cook rice in water until it boils
  3. 3. Reduce to a simmer and cook until all the water is absorbed (about 10 -12 minutes)
  4. 4. Tip cooked rice into a bowl and allow to cool for 10 minutes
  5. 5. Mix vinegar and sugar and mix into the rice, set aside to cool to room temperature
  6. 6. Chop the cucumber into small sticks
  7. 7. In another bowl mix the mayonnaise with the tuna
  8. 8. Lay out your bamboo rolling mat, place a sheet of nori on the mat, shiny side down
  9. 9. Spread the rice over the nori (leaving a centimetre of empty space along the edge of the nori furthest from you- this is the strip that will stick the roll closed)
  10. 10. Place the tuna and cucumber horizontally along the roll and roll up pressing firmly
  11. 11. When you reach the top 1 centimetre edge, dampen this part with water and continue rolling to seal the edge
  12. 12. Place the roll onto a chopping board and slice into 12 pieces using a sharp knife
Notes
Try different fillings like avocado slices, carrot sticks or an egg omelette cut into strips.
