Country Chicken
This hearty one-pan chicken meal with lots of flavour will become a family favourite.
Ingredients
- Oil spray
- 6-8 chicken drumsticks, skin removed
- 3/4 cup white long-grain rice
- 1 1/2 cups water
- 2 tablespoons wholegrain mustard
- 1 teaspoon dried mixed herbs
- 400grams kumara, scrubbed and quartered
- 1 carrot, chunky cut
- 1 cup whole green beans or 8 whole brussel sprouts or 2 zucchini cut into chunks
- 1 capsicum, deseeded and cut into generous wedges (optional)
- 425gram can apricot halves in juice (drained and discard juice)
Method
- 1. Pre-heat a large non-stick frypan.
- 2. Lightly spray with oil, add the chicken and cook until golden brown, turning often.
- 3. Remove the chicken drumsticks from the pan and set aside.
- 4. Add the rice, water, mustard and herbs. Mix well.
- 5. Add kumara and carrots to the rice mixture, mix briefly and place the chicken on top of the rice and vegetables. Do not stir.
- 6. Cover and cook gently for 15 minutes.
- 7. Add the rest of the ingredients, cover and cook until carrots and kumara are tender and chicken is cooked.
- 8. May also be baked, covered at 180 degrees celcius for 1 1/2 hours.
