BBQ vegetable medley
Cooked vegetables are a great addition to the BBQ and a tasty alternative to salads. Add extra flavour with garlic, herbs or chilli.
Ingredients
- Vegetables that cook well on the BBQ:
- - corn
- - onion
- - capsicum
- - asparagus
- - tomatoes
- - mushrooms
- - eggplant
- - zucchinis
- - pre-boiled kumara
- - pre-boil potato.
Method
- 1. Preheat barbeque to medium-high heat.
- 2. Wash and cut vegatbles. Some vegetables eg, mushrooms, tomatoes, asparagus and corn can been barbequed whole.
- 3. Lightly brush or spray vegetables with oil and season before cooking.
- 3. Cook on hot plate or on grill until tender, turning regularly during cooking.
