Chicken and stuffing soup

Try this tasty version of a deconstructed healthy traditional roast meal that's full of flavour. This recipe is available in English and Te Reo Māori.

15 meneti ki te whakarite, 35 meneti ki te taka, hei kai mā te 4-6 tāngata

Ingredients
  • 1kg raw chicken (1kirokaramu heihei mata)
  • 1 can of corn kernels (1 kēne kanga)
  • 2 carrots (2 kāroti)
  • ½ celery (½ herewī)
  • 1 potato (1 rīwai)
  • 1 onion (1 riki)
  • 8 cups of boiling water (8 kapu wai kōhua)
  • 2 Tbs oil (2P noni)
  • 1 Tbs chicken stock powder (1P paura heihei)
  • Mixed herbs (Ranunga otaota)
  • Salt and pepper to season (Tote me te pepa hei whakatāwara)
Method
  1. 1. Roughly chop onion (Tapahia te riki).
  2. 2. Slice carrots and celery (Tapahia te kāroti me te herewī).
  3. 3. Dice potato into equal or similar sized cubes (Tapatapahia te rīwai kia ōrite te rahinga).
  4. 4. Add oil to a pot and heat (Āpitihia te noni ki tētahi kōhua, ā, whakamahanatia).
  5. 5. Add onion and herbs and sauté (Āpitihia te riki me ngā ota ka parai ai.).
  6. 6. Boil 8 cups of water and add to pot with chicken stock (Koropupūtia ngā kapu wai e 8, ā riringihia ki te kōhua me ētahi paura heihei).
  7. 7. Add raw chicken and boil for 25 minutes (If the chicken is whole, boil then remove and strip meat off and return to pot) (Āpitihia te heihei mata, ā, kōhuatia mō te 25 meneti (mēnā e tūtahi tonu ana te heihei, kōhuatia, tīhorea te mīti ka whakahoki ai ki te kōhua).
  8. 8. Add all the raw vegetables and boil for 5 minutes (Āpitihia ngā huawhenua mata, ā, kōhuatia mō te 5 meneti).
  9. 9. Add corn. Season and serve (Āpitihia te kanga. Whakatāwarahia, ka horahia ai).
