Corn fritters

Looking for a quick meal to feed the family? Try these great corn fritters.
Ingredients
  • - 3 cups corn kernels (fresh, frozen or canned)
  • - 1 capsicum, diced
  • - 4 eggs
  • - 1/2 cup flour
  • - 1 teaspoon baking powder
  • - 3 tablespoons oil
Method
  1. 1. Mix together the corn kernels, capsicum, eggs, flour and baking powder.
  2. 2. Heat the oil in a large frying pan.
  3. 3. Spoon mixture into the pan to form fritters (about two tablespoons per fritter).
  4. 4. Cook the fritters in batches until browned on each side.
